Ingredients

The Pork

  • 1.5 lb pork tenderloin

The Spice Rub

  • 1 tablespoon garlic powder
  • ½ teaspoon ground pepper
  • ½ teaspoon salt
  • 1 teaspoon dried oregano
  • ¼ teaspoon smoked paprika

The Gravy

  • 3 tablespoons butter
  • 2 cups chicken broth
  • ½ white onion chopped
  • ½ tablespoon minced garlic
  • 4 oz crimini mushrooms
  • 1 tablespoon balsamic vinegar
  • 1.5-2 teaspoons cornstarch

Instructions

  1. Preheat the oven to 400ºF.
  2. Mix the spices for the rub and apply it to the pork tenderloin.
  3. Heat butter in a cast-iron skillet and sear the pork for 2-3 minutes on each side.
  4. Remove the pork and deglaze the skillet with 1.5 cups of broth, scraping the bottom.
  5. Add onion, garlic, mushrooms, and balsamic vinegar to the skillet and cook for 3 minutes.
  6. Place the pork back into the skillet surrounded by the veggies and roast for 10 minutes.
  7. Flip the pork and continue roasting for 12-16 minutes until the internal temperature reaches 145ºF.
  8. Let the pork rest for 5-10 minutes after removing it from the oven.
  9. Prepare the gravy by adding more broth to the skillet, bringing it to a simmer, and thickening with cornstarch.
  10. Slice the pork and serve with the mushroom gravy.
