Instant Pot Teriyaki Pork Tenderloin

Ingredients

The sauce

  • ½ cup Teriyaki Sauce
  • ½ cup Low Sodium Chicken Broth
  • 4 cloves Garlic
  • 4 Tbsp Brown Sugar
  • 1 tsp Ginger

The pork

  • 2 Tbsp Olive Oil
  • 1-½ lbs Pork Tenderloin
  • ½ sm Sweet Onion

To thicken sauce

  • 3 Tbsp Corn Starch
  • 4 Tbsp Cold Water

To serve

  • 3-4 cups Cooked Hot Rice
  • Sliced Green Onions (garnish)

Instructions

  1. Mix together the sauce ingredients and set aside.
  2. Turn on the Sauté setting and heat olive oil, then brown the pork tenderloin on each side.
  3. Remove the pork and set aside.
  4. Cook the onion until tender, deglazing the pot as needed.
  5. Turn off the pot and place the pork on top of the onions.
  6. Pour the sauce over the pork.
  7. Seal the lid and set to Pressure Cook for 0 minutes.
  8. After cooking, let it sit for 15 minutes before releasing the steam.
  9. Check the pork temperature; it should be 143° to 145°.
  10. Remove the pork and cover with foil.
  11. Turn on Sauté and stir in the corn starch slurry to thicken the sauce.
  12. Serve the sliced pork with sauce over hot rice, garnished with green onions.
