Instructions
- Whisk egg white and 2 Tbsp cornstarch in a bowl, then coat chicken with the mixture and set aside.
- In another bowl, mix orange juice, ketchup, red wine vinegar, honey, soy sauce, and remaining cornstarch.
- Heat 1½ Tbsp oil in a skillet over medium-high heat, add chicken, and cook until golden brown, then transfer to a plate.
- In the same skillet, add remaining oil and sauté bell pepper until crisp tender, then add green onions, ginger, and garlic for 30 seconds.
- Pour in the sauce mixture and cook until thickened, then add chicken and pineapple, tossing to combine before serving.
