Sweet and Sour Chicken

Ingredients

The chicken

  • 1 lb boneless skinless chicken breasts, cut into 1-inch cubes
  • 1 large egg white
  • 2 Tbsp cornstarch
  • to taste unit salt
  • 2 Tbsp vegetable oil or light olive oil

The sauce

  • cup orange juice
  • cup ketchup
  • 3 Tbsp red wine vinegar
  • 3 Tbsp honey
  • 2 Tbsp low-sodium soy sauce
  • 2 tsp cornstarch

The vegetables

  • 1 medium red bell pepper, cored and chopped into 1-inch pieces
  • 4 unit green onions, chopped into 1-inch pieces
  • 1 Tbsp peeled and minced fresh ginger
  • 1 Tbsp minced garlic
  • cups fresh pineapple chunks

Instructions

  1. Whisk egg white and 2 Tbsp cornstarch in a bowl, then coat chicken with the mixture and set aside.
  2. In another bowl, mix orange juice, ketchup, red wine vinegar, honey, soy sauce, and remaining cornstarch.
  3. Heat 1½ Tbsp oil in a skillet over medium-high heat, add chicken, and cook until golden brown, then transfer to a plate.
  4. In the same skillet, add remaining oil and sauté bell pepper until crisp tender, then add green onions, ginger, and garlic for 30 seconds.
  5. Pour in the sauce mixture and cook until thickened, then add chicken and pineapple, tossing to combine before serving.
