Instructions
- Cut the chicken breast into cubes and season with black pepper, ground ginger, garlic powder, and sea salt.
- In one bowl, whisk the eggs. In another bowl, add cornstarch. In a large bowl, mix flour, black pepper, garlic powder, and sea salt.
- Coat the chicken in cornstarch, then the egg mixture, and finally the flour mixture.
- Heat oil in a frying pan and pan-fry the chicken for 4 to 6 minutes. Drain on a rack or paper towel.
- For the sauce, sauté the chopped peppers for 4 to 5 minutes, then add the vinegars, brown sugar, ketchup, pineapple juice, soy sauce, minced garlic, garlic powder, and sea salt.
- Mix cornstarch with water and add to the sauce. Cook for 7 to 10 minutes on medium-low heat.
- Add the cooked chicken to the sauce and coat well. Serve with rice if desired.
