Ingredients

The chicken

  • 1 lb boneless chicken breast
  • 1 ½ tsp black pepper
  • ½ tsp ground ginger
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • ½ cup cornstarch
  • 2 units eggs
  • ½ cup all-purpose flour
  • 1 cup canola oil

The sauce

  • ½ cup red bell peppers, chopped
  • ½ cup green bell peppers, chopped
  • ¼ cup apple cider vinegar
  • ¼ cup white vinegar
  • ½ cup brown sugar
  • ¼ cup ketchup
  • ¼ cup pineapple juice
  • 2 tbsp soy sauce
  • 1 tbsp minced garlic
  • tsp garlic powder
  • ½ tsp sea salt
  • 1 tbsp cornstarch
  • 3 tbsp water

Instructions

  1. Cut the chicken breast into cubes and season with black pepper, ground ginger, garlic powder, and sea salt.
  2. In one bowl, whisk the eggs. In another bowl, add cornstarch. In a large bowl, mix flour, black pepper, garlic powder, and sea salt.
  3. Coat the chicken in cornstarch, then the egg mixture, and finally the flour mixture.
  4. Heat oil in a frying pan and pan-fry the chicken for 4 to 6 minutes. Drain on a rack or paper towel.
  5. For the sauce, sauté the chopped peppers for 4 to 5 minutes, then add the vinegars, brown sugar, ketchup, pineapple juice, soy sauce, minced garlic, garlic powder, and sea salt.
  6. Mix cornstarch with water and add to the sauce. Cook for 7 to 10 minutes on medium-low heat.
  7. Add the cooked chicken to the sauce and coat well. Serve with rice if desired.
