Ingredients

The sauce

  • ½ cup reserved pineapple juice
  • cup ketchup
  • 3 tablespoons rice vinegar or apple cider vinegar
  • 2 tablespoons coconut aminos
  • ½ teaspoon garlic powder
  • ½ teaspoon ground ginger
  • 1 tablespoon cornstarch or arrowroot starch

The chicken

  • 1 lb boneless skinless chicken breast
  • ½ teaspoon fine salt
  • teaspoon black pepper
  • 1 tablespoon avocado oil or olive oil

The vegetables

  • 2 medium bell peppers
  • ½ medium yellow onion
  • 2 medium carrots

Optional garnishes

  • 2 green onions thinly sliced
  • to taste sesame seeds

Instructions

  1. Whisk together the reserved pineapple juice, ketchup, vinegar, coconut aminos, garlic powder, and ginger in a small bowl, then slowly whisk in the cornstarch.
  2. In a medium bowl, season the chicken pieces with salt and pepper.
  3. Heat oil in a large skillet over medium-high heat and cook the chicken until browned, then transfer to a plate.
  4. In the same skillet, sauté onion and carrots for 4 minutes, then add bell peppers and cook until crisp-tender.
  5. Return the chicken to the skillet, add pineapple chunks, and pour the sauce over everything. Cook until the sauce thickens and the vegetables are tender.
  6. Garnish with green onions and sesame seeds if desired, and serve hot.
