Instructions
- Whisk together the reserved pineapple juice, ketchup, vinegar, coconut aminos, garlic powder, and ginger in a small bowl, then slowly whisk in the cornstarch.
- In a medium bowl, season the chicken pieces with salt and pepper.
- Heat oil in a large skillet over medium-high heat and cook the chicken until browned, then transfer to a plate.
- In the same skillet, sauté onion and carrots for 4 minutes, then add bell peppers and cook until crisp-tender.
- Return the chicken to the skillet, add pineapple chunks, and pour the sauce over everything. Cook until the sauce thickens and the vegetables are tender.
- Garnish with green onions and sesame seeds if desired, and serve hot.
