Sweet and Sour Chicken with Pineapple

Instructions
- Combine 1 cup pineapple juice, apple cider vinegar, ketchup, soy sauce, sugar, and ginger in a saucepan and simmer until sugar dissolves.
- Mix remaining ¼ cup pineapple juice with cornstarch and whisk into the sauce, simmering until thickened for 3-4 minutes.
- Taste and adjust seasoning, then stir in pineapple and set aside.
- Season chicken cubes with salt and pepper, then coat with cornstarch.
- Heat oil in a skillet and fry chicken in batches for 3-4 minutes until golden brown.
- Remove chicken and drain on paper towels, then toss with the sweet and sour sauce.
- Serve the chicken over rice and garnish with green onion.
