Sweet and Sour Chicken with Pineapple

Ingredients

Sweet and Sour Sauce

  • cups pineapple juice
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons ketchup
  • 2 tablespoons soy sauce
  • 1 tablespoon granulated sugar
  • ½ tablespoon finely minced or grated fresh ginger
  • 1 tablespoon cornstarch
  • 1 cup chopped fresh pineapple

Chicken

  • 1 pound boneless, skinless chicken breast
  • ¾ teaspoon coarse salt
  • ¼ teaspoon ground black pepper
  • ¼ cup cornstarch
  • ¼ cup oil
  • 2 cups cooked Jasmine rice
  • to taste chopped green onion

Instructions

  1. Combine 1 cup pineapple juice, apple cider vinegar, ketchup, soy sauce, sugar, and ginger in a saucepan and simmer until sugar dissolves.
  2. Mix remaining ¼ cup pineapple juice with cornstarch and whisk into the sauce, simmering until thickened for 3-4 minutes.
  3. Taste and adjust seasoning, then stir in pineapple and set aside.
  4. Season chicken cubes with salt and pepper, then coat with cornstarch.
  5. Heat oil in a skillet and fry chicken in batches for 3-4 minutes until golden brown.
  6. Remove chicken and drain on paper towels, then toss with the sweet and sour sauce.
  7. Serve the chicken over rice and garnish with green onion.
