Instructions
- Preheat the oven to 400ºF.
- Cut the onion, bell peppers, and chicken into one-inch pieces and drain the pineapple, reserving the juice.
- Place the onion, bell peppers, chicken, and pineapple on a large sheet pan in a single layer.
- Drizzle cooking oil over the ingredients and add garlic powder, ground ginger, salt, and pepper; toss to coat.
- Bake for about 40 minutes, stirring halfway through.
- While baking, prepare the sauce by whisking together reserved pineapple juice, ketchup, brown sugar, vinegar, soy sauce, and cornstarch in a small pot.
- Heat the sauce over medium flame until it simmers and thickens.
- Once the chicken and vegetables are done, pour the sauce over and stir to coat.
- Serve over warm rice and garnish with sliced green onions.
