Ingredients

The main ingredients

  • 1 large onion
  • 2 medium green bell peppers
  • 1 medium red bell pepper
  • 20 oz can pineapple chunks
  • 2 boneless skinless chicken breasts (about 1.25 lb.)
  • 2 Tbsp cooking oil
  • ¼ tsp garlic powder
  • ½ tsp ground ginger
  • to taste salt and pepper

The sauce

  • ¼ cup ketchup
  • ¼ cup brown sugar
  • cup rice or apple cider vinegar
  • Tbsp soy sauce
  • Tbsp cornstarch

For serving

  • 3 green onions sliced
  • 6 cups cooked rice

Instructions

  1. Preheat the oven to 400ºF.
  2. Cut the onion, bell peppers, and chicken into one-inch pieces and drain the pineapple, reserving the juice.
  3. Place the onion, bell peppers, chicken, and pineapple on a large sheet pan in a single layer.
  4. Drizzle cooking oil over the ingredients and add garlic powder, ground ginger, salt, and pepper; toss to coat.
  5. Bake for about 40 minutes, stirring halfway through.
  6. While baking, prepare the sauce by whisking together reserved pineapple juice, ketchup, brown sugar, vinegar, soy sauce, and cornstarch in a small pot.
  7. Heat the sauce over medium flame until it simmers and thickens.
  8. Once the chicken and vegetables are done, pour the sauce over and stir to coat.
  9. Serve over warm rice and garnish with sliced green onions.
