Ingredients

The chicken and vegetables

  • 2-3 tbsp extra-virgin olive oil
  • 2 large boneless skinless chicken breasts
  • ½ each green bell pepper
  • 1 small onion
  • 1 14oz can pineapple chunks
  • to taste salt

The sauce

  • ½ cup light chicken stock
  • ½ cup pineapple juice
  • ¼ cup unpasteurized honey
  • ¼ cup unseasoned rice vinegar
  • 2 tbsp coconut aminos
  • 1 tbsp toasted sesame oil
  • 1 tbsp fish sauce
  • 1 tbsp sambal oelek
  • 1 clove garlic
  • ½ tsp salt
  • 1 tsp ground ginger
  • 2 tbsp tapioca starch

Instructions

  1. Whisk together all sauce ingredients, except for the tapioca starch, in a large measuring cup.
  2. Heat olive oil in a large wok or skillet over high heat.
  3. Add chicken pieces to the hot pan and sprinkle with salt, cooking until golden brown, about 10 to 12 minutes.
  4. Add bell peppers and onions, cooking for about 1 minute until slightly softened.
  5. Mix in the drained pineapple chunks.
  6. Whisk the tapioca starch into the sauce and pour it into the skillet.
  7. Bring the sauce to a boil, stirring continuously until thickened.
  8. Remove from heat and serve with steamed rice, garnished with green onions if desired.
