Sweet and Sour Chicken

The sauce

light chicken stock

Instructions
- Whisk together all sauce ingredients, except for the tapioca starch, in a large measuring cup.
- Heat olive oil in a large wok or skillet over high heat.
- Add chicken pieces to the hot pan and sprinkle with salt, cooking until golden brown, about 10 to 12 minutes.
- Add bell peppers and onions, cooking for about 1 minute until slightly softened.
- Mix in the drained pineapple chunks.
- Whisk the tapioca starch into the sauce and pour it into the skillet.
- Bring the sauce to a boil, stirring continuously until thickened.
- Remove from heat and serve with steamed rice, garnished with green onions if desired.
