Instructions
- Whisk together the marinade ingredients and add the chicken, letting it marinate for at least 15 minutes.
- In a separate bowl, combine the sauce ingredients and set aside.
- Prepare the vegetables by cutting the bell peppers and onion into chunks.
- Heat oil in a skillet and stir fry the chicken until cooked through, then remove it from the pan.
- In the same skillet, stir fry the vegetables and pineapple until crisp-tender.
- Return the chicken to the skillet, pour the sauce over, and cook until the sauce thickens.
- Serve over brown rice and garnish with green onion if desired.
