Healthy Sweet and Sour Chicken

Ingredients

The sauce

  • 1 orange juiced
  • ΒΌ cup coconut aminos
  • 2 tbsp tomato paste
  • 1 tsp tapioca flour (or arrowroot starch)
  • 2 tsp paleo sriracha or hot sauce (or Primal Kitchen Spicy Ketchup)

The stir fry

  • 2 lbs chicken breast, cut into bite-sized pieces
  • 2 bell peppers chopped
  • 1 onion chopped into wedges
  • 2 cups pineapple, chopped
  • 2 tbsp avocado oil
  • to taste sea salt and pepper

Instructions

  1. Whisk together all sauce ingredients in a small bowl or jar and set aside.
  2. Cut chicken into bite-sized pieces and heat a large skillet or wok over medium-high heat, adding oil.
  3. Once hot, add chicken to the pan, season with salt and pepper, and cook until done, about 7-9 minutes. Remove and set aside.
  4. While chicken cooks, chop bell pepper, onion, and pineapple.
  5. Add more oil to the pan if needed, then add veggies and pineapple, cooking until softened, about 5-6 minutes.
  6. Return chicken to the skillet, add sauce, and cook while stirring until the sauce thickens, about 2-3 minutes.
  7. Serve over rice or cauliflower rice, in a lettuce wrap, or over greens.
