Healthy Sweet and Sour Chicken

paleo sriracha or hot sauce (or Primal Kitchen Spicy Ketchup)
The stir fry

chicken breast, cut into bite-sized pieces

bell peppers
chopped

onion
chopped into wedges

pineapple, chopped

avocado oil

Instructions
- Whisk together all sauce ingredients in a small bowl or jar and set aside.
- Cut chicken into bite-sized pieces and heat a large skillet or wok over medium-high heat, adding oil.
- Once hot, add chicken to the pan, season with salt and pepper, and cook until done, about 7-9 minutes. Remove and set aside.
- While chicken cooks, chop bell pepper, onion, and pineapple.
- Add more oil to the pan if needed, then add veggies and pineapple, cooking until softened, about 5-6 minutes.
- Return chicken to the skillet, add sauce, and cook while stirring until the sauce thickens, about 2-3 minutes.
- Serve over rice or cauliflower rice, in a lettuce wrap, or over greens.
