Light & Fluffy Coconut Cream Whipped Cream

coconut cream (14oz can, refrigerated overnight or 24 hours)

sweetener (maple syrup, erythritol, or monk fruit drops)

Instructions
- Refrigerate the can of coconut cream overnight or for 24 hours.
- Chill a metal bowl in the freezer for 10 minutes.
- Scoop the solid cream from the can into the chilled bowl, reserving the leftover water.
- Using a hand or stand mixer with a whisk attachment, whip the coconut cream until stiff peaks form.
- If the mixture is too thick, add a little reserved coconut water until the desired consistency is achieved.
- Mix in vanilla extract, sweetener, and cinnamon with a spoon.
- Serve immediately or store in the fridge until ready to serve.
