Ingredients

  • 1 can coconut cream (14oz can, refrigerated overnight or 24 hours)
  • 1 tsp vanilla extract
  • to taste sweetener (maple syrup, erythritol, or monk fruit drops)
  • to taste cinnamon

Instructions

  1. Refrigerate the can of coconut cream overnight or for 24 hours.
  2. Chill a metal bowl in the freezer for 10 minutes.
  3. Scoop the solid cream from the can into the chilled bowl, reserving the leftover water.
  4. Using a hand or stand mixer with a whisk attachment, whip the coconut cream until stiff peaks form.
  5. If the mixture is too thick, add a little reserved coconut water until the desired consistency is achieved.
  6. Mix in vanilla extract, sweetener, and cinnamon with a spoon.
  7. Serve immediately or store in the fridge until ready to serve.
