Instructions
- Melt the butter in a large pot over medium heat.
- Add the onions and celery, cooking until softened.
- Season with salt and pepper, then add flour and cook for 1 minute.
- Stir in the garlic and cook for an additional 30 seconds.
- Add the chicken, carrots, gnocchi, Italian seasoning, and spinach to the pot.
- Pour in the chicken broth and half and half, then bring to a simmer.
- Season the soup with salt and pepper and stir to combine.
- Cook for 5-7 minutes until the soup thickens and the spinach wilts.
- Sprinkle with parsley before serving.
