Ingredients

  • 3 tablespoons butter
  • ¾ cup onion, chopped
  • ¾ cup celery, sliced
  • 3 tablespoons all-purpose flour
  • 2 teaspoons minced garlic
  • 3 cups cooked chicken, cut into ¾ inch pieces
  • ¾ cup shredded carrots
  • 16 ounces gnocchi
  • 1 teaspoon Italian seasoning
  • cups baby spinach leaves
  • 3 cups chicken broth
  • 2 cups half and half
  • 2 tablespoons chopped parsley
  • to taste salt and pepper

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the onions and celery, cooking until softened.
  3. Season with salt and pepper, then add flour and cook for 1 minute.
  4. Stir in the garlic and cook for an additional 30 seconds.
  5. Add the chicken, carrots, gnocchi, Italian seasoning, and spinach to the pot.
  6. Pour in the chicken broth and half and half, then bring to a simmer.
  7. Season the soup with salt and pepper and stir to combine.
  8. Cook for 5-7 minutes until the soup thickens and the spinach wilts.
  9. Sprinkle with parsley before serving.
