Ingredients

The soup base

  • 1 tablespoon olive oil
  • 1 cup diced carrots
  • ½ cup diced onion
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 cloves garlic
  • 2 cups chicken broth
  • 3 cups milk
  • ¼ cup all-purpose flour

The additions

  • 16 ounces gnocchi
  • 2 cups cooked, chopped chicken
  • 2 cups coarsely chopped fresh spinach

Instructions

  1. Heat olive oil in a large pot over medium heat and sauté carrots, onion, thyme, garlic, salt, and pepper until onions are translucent.
  2. Add chicken broth and simmer for 10-15 minutes until vegetables are soft.
  3. Whisk or blend milk and flour together until smooth, then add to the soup and simmer until slightly thickened.
  4. Add gnocchi to the soup and simmer for 5-6 minutes until tender.
  5. Stir in chicken and spinach, heating through for another 4-5 minutes.
  6. Serve immediately or keep warm in a slow cooker.
