Creamy Chicken Gnocchi Soup

Instructions
- Heat olive oil in a large pot over medium heat and sauté carrots, onion, thyme, garlic, salt, and pepper until onions are translucent.
- Add chicken broth and simmer for 10-15 minutes until vegetables are soft.
- Whisk or blend milk and flour together until smooth, then add to the soup and simmer until slightly thickened.
- Add gnocchi to the soup and simmer for 5-6 minutes until tender.
- Stir in chicken and spinach, heating through for another 4-5 minutes.
- Serve immediately or keep warm in a slow cooker.
