Ingredients

The lentils

  • ½ cup yellow lentils (toor dal or split pigeon peas)

The spices and seasonings

  • ½ teaspoon cumin seeds
  • ½ teaspoon mustard seeds
  • ¼ teaspoon turmeric powder
  • ½ teaspoon garam masala
  • salt to taste

The aromatics

  • 3-4 cloves garlic (chopped)
  • 1 large tomato (chopped)
  • 1 whole green chile (chopped)
  • ½ lemon juice (fresh preferred)
  • cilantro for garnish

The cooking fats

  • 1 tablespoon ghee or avocado oil

The liquid

  • cups water

For serving

  • naan for serving
  • basmati rice for serving

Instructions

  1. Wash and rinse the lentils and set them aside.
  2. Press sauté mode on the Instant Pot and add the oil.
  3. Once hot, add the cumin seeds and mustard seeds, letting them crackle until fragrant.
  4. Add the chopped garlic and green chili, sautéing until the garlic turns golden brown.
  5. Mix in the chopped tomato and cook for a minute.
  6. Add salt and turmeric powder, cooking the mixture for 1-2 minutes.
  7. Stir in the rinsed lentils and combine well.
  8. Add the water, mix, and close the lid of the Instant Pot.
  9. Cancel sauté mode, select manual, and cook on high pressure for 10 minutes.
  10. After 10 minutes, wait 6-7 minutes, then release the pressure.
  11. Adjust salt to taste and stir in garam masala, cilantro, and lemon juice.
