Ingredients

The dal

  • 1 cup red lentils, rinsed and drained
  • 2 cups low-sodium vegetable broth
  • 1 cup light canned coconut milk
  • ½ cup chopped onion
  • 1 cup chopped tomatoes
  • 1 teaspoon coriander seeds
  • 1 teaspoon curry powder
  • 1 teaspoon garam masala

Toppings (optional)

  • to taste chopped fresh cilantro
  • to taste fresh lemon

Instructions

  1. Chop the onion and tomato, then rinse the lentils.
  2. Combine all ingredients in the Instant Pot.
  3. Lock the lid and set to cook for 5 minutes at high pressure.
  4. Allow pressure to come down naturally for about 5 minutes, then quick release any remaining pressure.
  5. Stir the dal and serve hot, optionally topping with cilantro and lemon.
