Beef Curry with Pumpkin

Instructions
- Mix vegetable oil, red curry paste, and 4 tablespoons of coconut milk in a bowl.
- Stir-fry the mixture in a wok over medium heat until fragrant.
- Add the beef and cook for about 1 minute, then add 1½ cups of coconut milk, fish sauce, sugar, paprika powder, and kaffir lime leaves.
- Stir to combine and bring to a boil.
- Reduce heat and cook for 8-10 minutes.
- Add the pumpkin and cook for an additional 4-5 minutes.
- Serve with rice.
