Easy Jerk Chicken Thighs

Ingredients

The chicken

  • 1½-2 pounds chicken thighs

Jerk Seasoning and Rub

  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • ½ teaspoon ground nutmeg
  • 1 tablespoon brown sugar or sweetener
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon dried or ground thyme
  • ½ teaspoon onion powder
  • to taste salt and pepper

Jerk Marinade

  • 1 piece habanero
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh lime juice
  • ¼ cup pineapple juice
  • 1 teaspoon fresh ginger
  • 1 teaspoon liquid smoke

Instructions

  1. Blend all jerk spices, habanero, soy sauce, pineapple juice, lime juice, liquid smoke, and ginger until well combined.
  2. Drizzle the marinade over the chicken and marinate in the fridge if desired.
  3. For pan-seared chicken, heat a skillet with olive oil and cook the chicken until it reaches 165°F.
  4. For air fryer chicken, cook bone-in thighs at 400°F for 10 minutes, flip, and cook for another 10-12 minutes.
  5. Remove the chicken from heat and let it cool before serving.
