Slow Cooker Jerk Chicken

Ingredients

The chicken

  • 2 lbs bone in, skin on chicken thighs

The sauce

  • 1 tbsp ghee (or other cooking oil)
  • ¼ cup coconut aminos
  • ¼ cup chicken broth
  • 1 tbsp molasses (optional)
  • 1 1 lime (juice of)

The seasoning mix

  • 1 tsp allspice
  • 1 tsp cumin
  • 1 tsp sage
  • 1 tsp thyme
  • ½ tsp nutmeg
  • ½ tsp sea salt
  • ¼ tsp cayenne pepper

Instructions

  1. Mix all seasoning ingredients in a small bowl or jar.
  2. Rub the seasoning mix on both sides of the chicken thighs.
  3. Heat a skillet over medium heat and add ghee.
  4. Sear the chicken thighs skin side down for 3-4 minutes, then flip and cook for another 2-3 minutes.
  5. Transfer the chicken to the slow cooker.
  6. In a bowl, whisk together the coconut aminos, chicken broth, lime juice, and molasses.
  7. Pour the broth mixture over the chicken in the slow cooker.
  8. Cover and cook on high for 3 hours or low for 6 hours.
  9. Carefully remove the chicken and serve, optionally drizzling some juices over it.
