Slow Cooker Jerk Chicken

Ingredients

The Chicken

  • 5 lbs chicken pieces

The Marinade

  • ¼ cup molasses (not black strap)
  • 2 Tbsp vegetable oil
  • cup soy sauce
  • 4 cloves garlic, peeled
  • 3-4 inches fresh ginger
  • 1 Tbsp cinnamon
  • 1 tsp allspice
  • 1 tsp thyme
  • ¼ tsp nutmeg
  • 1 medium onion
  • 1 medium orange
  • 1 medium serrano or jalapeno pepper

Instructions

  1. Blend the marinade ingredients until smooth.
  2. Arrange chicken pieces in the slow cooker and spread ⅔ of the spice rub over them.
  3. Add onion, orange, and serrano pepper to the slow cooker.
  4. Cover and cook on high for 4 hours.
  5. Remove chicken and place on a broiler pan, spreading the remaining spice rub on top.
  6. Broil in the oven for about 5 minutes until the skin is crispy.
