Vegetarian Stuffed Peppers

The peppers

bell peppers, tops and seeds removed

Instructions
- Heat olive oil in a saucepan over medium heat and cook green onions and peppers for 5 minutes.
- Add rice, vegetable broth, salsa, spices, and red beans to the saucepan.
- Simmer the mixture for 20 minutes until the rice is al dente.
- Cut off the tops of the bell peppers and remove the seeds.
- Fill the peppers with the rice stuffing, compacting it slightly.
- Place the stuffed peppers in a baking dish and garnish with cheese.
- Pour an inch of water into the bottom of the dish.
- Cook in the oven for 30 minutes or until the peppers are very tender.
