Vegetarian Stuffed Peppers

Ingredients

The filling

  • 1 cup rice
  • 1 cup vegetable broth
  • ¾ cup salsa
  • 1 tbsp olive oil
  • 3 pieces green onions, chopped
  • ½ cup red beans
  • 1 tbsp chili powder
  • ½ tbsp ground cumin
  • to taste salt and pepper

The peppers

  • 4 pieces bell peppers, tops and seeds removed
  • ¾ cup cheese, grated

Instructions

  1. Heat olive oil in a saucepan over medium heat and cook green onions and peppers for 5 minutes.
  2. Add rice, vegetable broth, salsa, spices, and red beans to the saucepan.
  3. Simmer the mixture for 20 minutes until the rice is al dente.
  4. Cut off the tops of the bell peppers and remove the seeds.
  5. Fill the peppers with the rice stuffing, compacting it slightly.
  6. Place the stuffed peppers in a baking dish and garnish with cheese.
  7. Pour an inch of water into the bottom of the dish.
  8. Cook in the oven for 30 minutes or until the peppers are very tender.
