Ingredients

The peppers

  • 4 pieces red bell peppers

The filling

  • 2 tablespoons extra-virgin olive oil
  • 1 medium yellow onion
  • 1 piece jalapeño pepper
  • 4 cloves garlic
  • 2 tablespoons tomato paste
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • ¾ teaspoon sea salt
  • cups cooked brown rice
  • cups cooked black beans
  • 1 cup corn kernels
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 1 cup shredded pepper jack cheese
  • ½ cup chopped fresh cilantro

Instructions

  1. Preheat the oven to 450°F and prepare a baking sheet.
  2. Halve the peppers, remove seeds, drizzle with oil, season, and bake for 10 minutes.
  3. In a skillet, heat olive oil and sauté onion, jalapeño, and garlic until softened.
  4. Add tomato paste, chili powder, cumin, salt, and pepper, cooking until fragrant.
  5. Stir in brown rice, black beans, corn, lime juice, and zest; season to taste.
  6. Stuff the peppers with the filling, top with cheese, and broil for 5 to 10 minutes.
  7. Garnish with cilantro and serve with salsa and avocado if desired.
