Instructions
- Preheat the oven to 450°F and prepare a baking sheet.
- Halve the peppers, remove seeds, drizzle with oil, season, and bake for 10 minutes.
- In a skillet, heat olive oil and sauté onion, jalapeño, and garlic until softened.
- Add tomato paste, chili powder, cumin, salt, and pepper, cooking until fragrant.
- Stir in brown rice, black beans, corn, lime juice, and zest; season to taste.
- Stuff the peppers with the filling, top with cheese, and broil for 5 to 10 minutes.
- Garnish with cilantro and serve with salsa and avocado if desired.
