Ingredients

  • ½ cup butter, melted
  • 2 large eggs
  • ounce box cornbread mix (such as Jiffy)
  • 15 ounce can corn kernels, drained
  • 14¾ ounce can creamed corn
  • 1 cup sour cream
  • 2 teaspoons sugar
  • as needed cooking spray
  • as desired fresh herbs (such as chives) for garnish

Instructions

  1. Preheat the oven to 350°F and prepare a baking dish with cooking spray.
  2. In a large bowl, mix together melted butter, eggs, cornbread mix, corn kernels, creamed corn, sour cream, and sugar until well combined.
  3. Spread the mixture evenly into the prepared baking dish.
  4. Bake for 45 minutes or until the top is lightly browned.
  5. Let cool for 5 minutes, sprinkle with chives if desired, and serve.
