Instructions
- Zest and juice the lemon, combining the juice and zest with the other vinaigrette ingredients.
- Bring a large pot of salted water to a boil and cook the pasta until tender, then drain and rinse with cool water.
- Prepare the vegetables by cutting the corn kernels off the cobs, halving the grape tomatoes, dicing the zucchini, onion, and avocado.
- In a large bowl, combine the drained pasta with the prepared vegetables.
- Pour the dressing over the salad and toss to combine, then season with salt to taste and serve.
