Instructions
- Sauté the chicken and onion in the Instant Pot with cooking oil for a few minutes.
- Add the thyme, garlic powder, cinnamon, salt, and pepper to the pot.
- Cancel the sauté function and add the water, sweet potatoes, and tomatoes, stirring to combine.
- Lock the lid and set the cooking time to 8 minutes on high pressure.
- After cooking, let the pressure release naturally for 10 minutes, then quick-release the remaining pressure.
- Stir in the cilantro and lemon or lime juice before serving.
