Festive Cranberry Cake

Ingredients

The cake

  • 1 cup sugar
  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon sea salt
  • ¾ cup olive oil
  • ½ cup vegan yogurt or applesauce
  • ½ cup non-dairy milk
  • ½ cup orange juice
  • 1 teaspoon vanilla
  • ¼ teaspoon orange oil (optional)
  • 1 tablespoon orange zest
  • 1 cup fresh cranberries
  • 1 cup toasted walnuts

The glaze

  • 1 cup powdered sugar
  • 2 tablespoons orange juice

Instructions

  1. Preheat the oven to 350°F and prepare your pan.
  2. Zest and juice the oranges, rinse the cranberries, toast and chop the walnuts.
  3. In a large bowl, mix together the sugar, flour, baking powder, baking soda, and sea salt.
  4. Whisk together the olive oil, vegan yogurt (or applesauce), non-dairy milk, orange juice and zest, vanilla, and orange oil.
  5. Combine the wet mixture with the dry ingredients, adding the cranberries and walnuts, and stir gently.
  6. Pour the batter into the prepared pan and spread it out evenly.
  7. Bake for 40-50 minutes until golden and puffed, then let cool for 15 minutes before removing from the pan.
  8. For the glaze, whisk together the powdered sugar and orange juice until smooth, then drizzle over the cooled cake.
