The glaze

Instructions
- Preheat the oven to 350°F and prepare your pan.
- Zest and juice the oranges, rinse the cranberries, toast and chop the walnuts.
- In a large bowl, mix together the sugar, flour, baking powder, baking soda, and sea salt.
- Whisk together the olive oil, vegan yogurt (or applesauce), non-dairy milk, orange juice and zest, vanilla, and orange oil.
- Combine the wet mixture with the dry ingredients, adding the cranberries and walnuts, and stir gently.
- Pour the batter into the prepared pan and spread it out evenly.
- Bake for 40-50 minutes until golden and puffed, then let cool for 15 minutes before removing from the pan.
- For the glaze, whisk together the powdered sugar and orange juice until smooth, then drizzle over the cooled cake.
