Ingredients

The steak

  • 1 lb skirt steak
  • to taste salt
  • to taste pepper

Chimichurri sauce

  • 1 cup fresh cilantro, chopped
  • ½ cup fresh flat-leaf parsley, chopped
  • ¼ cup fresh oregano, chopped
  • 2 cloves garlic, minced
  • ¼ cup red wine vinegar
  • ¾ tsp red pepper flakes
  • 1 lime juice of
  • ½ cup olive oil

Instructions

  1. Chop the parsley, cilantro, oregano, and garlic.
  2. Combine the chopped ingredients in a food processor with vinegar, lime juice, red pepper flakes, salt, and pepper, then pulse to mix and gradually add olive oil until smooth.
  3. Transfer the chimichurri to a bowl and set aside.
  4. Season both sides of the skirt steak with salt and pepper.
  5. Grill the steak on medium-high heat for 3-4 minutes on each side.
  6. Let the steak rest for 5 minutes before slicing.
  7. Serve the steak slices topped with chimichurri sauce.
