Chimichurri Steak

Ingredients

The steak

  • 1 lb Flank steak
  • 1 tsp Sea salt
  • ½ tsp Black pepper
  • 2 tbsp Olive oil

The chimichurri sauce

  • ¼ cup Extra virgin olive oil
  • 1 tbsp White wine vinegar
  • ¾ oz Fresh parsley (chopped)
  • 2 cloves Garlic (minced)
  • 1 tsp Dried oregano
  • ¼ tsp Sea salt
  • ¼ tsp Crushed red pepper flakes

Instructions

  1. Remove the steak from the refrigerator 30 minutes prior to cooking for even cooking.
  2. Pat the steak dry with paper towels and season both sides with salt and pepper.
  3. Preheat a large cast iron skillet or grill.
  4. Cook the steak to your desired doneness, checking the internal temperature.
  5. Remove the steak from heat, cover with foil, and let it rest for 10 minutes.
  6. Meanwhile, prepare the chimichurri sauce by combining all sauce ingredients in a glass jar and shaking until emulsified.
  7. Slice the steak against the grain and serve with chimichurri sauce.
