Instructions
- Remove the steak from the refrigerator 30 minutes prior to cooking for even cooking.
- Pat the steak dry with paper towels and season both sides with salt and pepper.
- Preheat a large cast iron skillet or grill.
- Cook the steak to your desired doneness, checking the internal temperature.
- Remove the steak from heat, cover with foil, and let it rest for 10 minutes.
- Meanwhile, prepare the chimichurri sauce by combining all sauce ingredients in a glass jar and shaking until emulsified.
- Slice the steak against the grain and serve with chimichurri sauce.
