Ingredients

Chimichurri Sauce

  • 1 bunch parsley
  • 1 medium shallot
  • 2 cloves garlic
  • 1 small red chili
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 cup extra virgin olive oil
  • 1 small lime (juiced and zested)

Steak

  • pounds flank steak
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 tablespoons butter (softened)

Instructions

  1. Make the chimichurri sauce by blending parsley, shallot, garlic, chili, salt, pepper, oregano, and thyme until smooth, then stir in olive oil, lime juice, and zest.
  2. Season the flank steak with salt, pepper, and melted butter.
  3. Heat a skillet over medium heat and sear the steak for 6 minutes, flipping halfway through.
  4. Remove the steak from heat and let it rest for 10 minutes before slicing and serving with chimichurri sauce.
