Ingredients

Steak Marinade

  • 2 lb flank steak
  • ¼ cup olive oil
  • 1 unit lime juice
  • 3 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp pepper

Chimichurri

  • ¾ cup cilantro
  • ¾ cup parsley
  • ¼ cup olive oil
  • 2 tbsp red wine vinegar
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp pepper
  • pinch unit red pepper flakes

Instructions

  1. 1. Prepare the marinade by mixing all marinade ingredients together in a bowl.
  2. 2. Add the flank steak to a marinating dish and pour the marinade over the top. Marinate for at least 30 minutes, or overnight for more flavor.
  3. 3. In a food processor or blender, pulse all chimichurri ingredients until just combined, ensuring some texture remains.
  4. 4. Preheat the grill to 450°F and grease it. Heat for about 10 minutes.
  5. 5. Add the marinated flank steak to the hot grill and sear each side for one minute.
  6. 6. After searing, reduce heat to medium and cook each side for an additional 3-4 minutes. Use a meat thermometer to check for doneness (125°F for rare, 135°F for medium).
  7. 7. Let the meat rest for at least 10 minutes before cutting.
  8. 8. Spoon the chimichurri sauce over the steak and sprinkle with flaky sea salt before serving.
