Ingredients

Flank Steak

  • 2–3 lb. flank steak
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried cilantro
  • ½ teaspoon smoked chipotle chili powder
  • 1 teaspoon salt
  • ½ teaspoon ground pepper

Other Parts

  • 2 avocados, sliced
  • 1 pint cherry tomatoes
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • Chimichurri Sauce
  • Parsnip Puree

Instructions

  1. Preheat the oven to 400°F.
  2. Place cherry tomatoes on a baking sheet, season with olive oil and salt, and roast for 20 minutes.
  3. Heat the grill to medium-high heat.
  4. In a small bowl, mix garlic powder, smoked paprika, dried cilantro, smoked chipotle chili powder, salt, and ground pepper.
  5. Rub the seasoning mixture onto both sides of the flank steak.
  6. Grill the steak for 4-6 minutes on each side, until it reaches your desired doneness.
  7. Let the steak rest for 3-4 minutes, then slice it.
  8. Serve the steak on a bed of parsnip puree, topped with roasted tomatoes, sliced avocado, and chimichurri sauce.
