Instructions
- Preheat the oven to 400°F.
- Place cherry tomatoes on a baking sheet, season with olive oil and salt, and roast for 20 minutes.
- Heat the grill to medium-high heat.
- In a small bowl, mix garlic powder, smoked paprika, dried cilantro, smoked chipotle chili powder, salt, and ground pepper.
- Rub the seasoning mixture onto both sides of the flank steak.
- Grill the steak for 4-6 minutes on each side, until it reaches your desired doneness.
- Let the steak rest for 3-4 minutes, then slice it.
- Serve the steak on a bed of parsnip puree, topped with roasted tomatoes, sliced avocado, and chimichurri sauce.
