Coconut Chicken Soup

mushrooms, rinsed, drained and sliced in half lengthwise

Instructions
- 1. In a large pot, bring chicken stock and ginger to a boil.
- 2. Reduce heat to low and simmer for 5 minutes.
- 3. Stir in coconut milk, fish sauce, chicken, mushrooms, and carrot, and simmer for 15-20 minutes.
- 4. Just before serving, stir in lime juice and cilantro.
- 5. Serve the soup.
