Rustic Pesto Potato Salad

Ingredients

  • 1 lb small thin skinned potatoes
  • 1 lb green beans
  • 4-6 cloves garlic
  • ½ cup basil
  • ¼ cup toasted pine nuts
  • ¼ cup extra virgin olive oil
  • to taste salt and pepper

Instructions

  1. Boil the potatoes in salted water until almost tender.
  2. Add the green beans to the pot and cook until bright and tender.
  3. Drain the potatoes and green beans and return them to the pot.
  4. Mix in garlic, basil, pine nuts, olive oil, salt, and pepper thoroughly.
  5. Taste and adjust seasonings if necessary.
  6. Serve on plates and enjoy.
