Lentil Stew

Ingredients

  • 1 tablespoon sesame oil
  • ¼ teaspoon fresh ginger
  • 2 tablespoons red curry paste
  • ½ large red onion, minced
  • 4 cloves garlic, minced
  • ¼ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • ½-1 tablespoon coconut sugar
  • ½ tablespoon light soy sauce
  • cups dry green lentils, rinsed and picked over
  • 1 can coconut milk
  • 2 cups vegetable broth
  • juice of 1 lime
  • ½ tablespoon sambal oelek or Sriracha (optional)

Instructions

  1. Heat sesame oil in a pan over medium-high heat and cook ginger and curry paste for about 1 minute.
  2. Add minced onion and garlic, cooking until the onion is slightly translucent, about 5 minutes.
  3. Stir in sea salt, black pepper, coconut sugar, and soy sauce, then add the lentils and mix well.
  4. Pour in coconut milk and vegetable broth, bring to a boil, then reduce to a simmer for 30 to 40 minutes until lentils are tender, stirring occasionally.
  5. Add lime juice, remove from heat, and season to taste. Optionally stir in sambal oelek or Sriracha before serving.
