Instructions
- Heat sesame oil in a pan over medium-high heat and cook ginger and curry paste for about 1 minute.
- Add minced onion and garlic, cooking until the onion is slightly translucent, about 5 minutes.
- Stir in sea salt, black pepper, coconut sugar, and soy sauce, then add the lentils and mix well.
- Pour in coconut milk and vegetable broth, bring to a boil, then reduce to a simmer for 30 to 40 minutes until lentils are tender, stirring occasionally.
- Add lime juice, remove from heat, and season to taste. Optionally stir in sambal oelek or Sriracha before serving.
