Instructions
- Preheat the oven to 425°F.
- Blend the marinade ingredients until smooth.
- Season the tofu and/or chicken with salt and pepper, then coat with the marinade.
- Prepare the vegetables and arrange them on a sheet pan with the tofu/chicken.
- Roast in the oven for about 20-25 minutes, tossing the veggies halfway through.
- Heat the black beans with seasoning.
- Serve the roasted mixture over the beans, topped with mango slices, lime juice, and scallions.
