Caribbean-Style Island Bowls

Ingredients

The main ingredients

  • 16 ounces chicken breast or tofu filets
  • 1 each sweet potato or yam
  • 1 each onion
  • 1 each red or yellow bell pepper
  • ½ each cabbage
  • 1 can black beans
  • 1 each ripe mango
  • 1 each lime
  • 2 each scallions

The marinade

  • ¼ cup olive oil
  • ¼ cup fresh orange juice
  • 1 teaspoon orange zest
  • 2 teaspoons soy sauce
  • 2 teaspoons honey, maple or agave
  • 5 cloves garlic
  • 1 teaspoon allspice
  • ½ teaspoon salt
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground clove
  • ¼ teaspoon cayenne or chili flakes

Instructions

  1. Preheat the oven to 425°F.
  2. Blend the marinade ingredients until smooth.
  3. Season the tofu and/or chicken with salt and pepper, then coat with the marinade.
  4. Prepare the vegetables and arrange them on a sheet pan with the tofu/chicken.
  5. Roast in the oven for about 20-25 minutes, tossing the veggies halfway through.
  6. Heat the black beans with seasoning.
  7. Serve the roasted mixture over the beans, topped with mango slices, lime juice, and scallions.
