Instructions
- Char and toast the aromatics by placing sliced onion and ginger in a pot and charring them until slightly blackened.
- Add peppercorns, star anise, and fennel seeds to the pot and toast for a couple of minutes.
- Cook the chicken in the broth by adding chicken, water, broth, cinnamon sticks, and cilantro to the pot and bringing it to a boil.
- Simmer for 15 to 20 minutes until the chicken is cooked, then remove and set aside the chicken.
- Strain the broth to remove solids and add fish sauce, soy sauce, and sugar, then simmer for another 15 to 20 minutes.
- Prepare the rice noodles according to package directions while the broth simmers.
- Shred the chicken and set aside.
- Assemble the pho by placing noodles in a bowl, topping with shredded chicken, ladling broth over, and adding desired toppings.
