Ingredients

Pho Ingredients

  • 1 small onion, sliced thinly
  • 1 inch whole ginger, peeled and thinly sliced
  • 1 Tablespoon whole black peppercorns
  • 3 whole star anise
  • 1 teaspoon fennel seed
  • 1 pound chicken skinless thighs or breast
  • 6 cups chicken broth
  • 1 cup water
  • 2 sticks cinnamon
  • ½ cup cilantro
  • 2 Tablespoons gluten free fish sauce
  • 1 Tablespoon gluten-free soy sauce or tamari
  • 2 teaspoons cane sugar or maple syrup (optional)
  • to taste Kosher salt
  • 10 oz gluten-free flat rice noodles

Toppings

  • to taste sliced jalapeño or red chiles
  • 2 cups mung bean sprouts
  • to taste sliced green onion
  • to taste fresh torn cilantro and/or Thai basil
  • to taste fresh squeezed lime

Instructions

  1. Char and toast the aromatics by placing sliced onion and ginger in a pot and charring them until slightly blackened.
  2. Add peppercorns, star anise, and fennel seeds to the pot and toast for a couple of minutes.
  3. Cook the chicken in the broth by adding chicken, water, broth, cinnamon sticks, and cilantro to the pot and bringing it to a boil.
  4. Simmer for 15 to 20 minutes until the chicken is cooked, then remove and set aside the chicken.
  5. Strain the broth to remove solids and add fish sauce, soy sauce, and sugar, then simmer for another 15 to 20 minutes.
  6. Prepare the rice noodles according to package directions while the broth simmers.
  7. Shred the chicken and set aside.
  8. Assemble the pho by placing noodles in a bowl, topping with shredded chicken, ladling broth over, and adding desired toppings.
