Shira-ae (Mashed Tofu Salad)

Ingredients

Tofu dressing

  • 150 g Tofu (firm or silken)
  • 2 tbsp roasted white sesame seeds
  • 2 tbsp sugar
  • ½ tsp salt

Salad vegetables

  • 60 g Konnyaku
  • 30 g carrot
  • ½ cup edamame soybeans (frozen and without pods)
  • 1 tbsp dry hijiki

Instructions

  1. Drain excess water from the tofu by wrapping it in paper towel and placing a weight on top for 15 minutes.
  2. Grind the sesame seeds in a mortar and pestle.
  3. Break the tofu into the mortar, add sugar and salt, and mix well.
  4. Cut the konnyaku and carrot into bite-sized pieces and cook them in boiling water for a few minutes, then drain.
  5. Reconstitute hijiki by soaking it in water for about 20 minutes, then drain and squeeze out excess water.
  6. Combine all ingredients in a large mixing bowl just before serving.
