Quick Shredded Tofu Stir-fry

The stir-fry

pea shoots

extra-firm tofu, shredded

well-toasted pepitas

(black) sesame seeds
Instructions
- Prepare the dressing by whisking together the pepper, salt, vinegar, honey, and 3 tablespoons of olive oil until emulsified, then mix in the crème fraiche or yogurt.
- Heat the remaining tablespoon of olive oil in a skillet over medium-high heat and sauté the pea shoots with a pinch of salt for about 5 seconds until wilted, then transfer to a plate.
- In the same skillet, add the shredded tofu, most of the pepitas and sesame seeds, and two-thirds of the dressing. Toss gently to warm without breaking the tofu.
- Transfer the mixture to a serving platter, top with pea shoots, remaining sesame seeds, and pepitas, and serve with extra dressing on the side.
