Quick Shredded Tofu Stir-fry

Ingredients

The dressing

  • 1 small Serrano pepper, seeded and minced
  • ¼ teaspoon fine grain sea salt
  • 1 tablespoon white wine vinegar
  • 1 teaspoon runny honey, brown sugar, or maple syrup
  • 4 tablespoons extra virgin olive oil
  • 1 tablespoon crème fraiche, sour cream, or non-dairy yogurt

The stir-fry

  • 2 cups pea shoots
  • 8 ounces extra-firm tofu, shredded
  • ½ cup well-toasted pepitas
  • 3 tablespoons (black) sesame seeds

Instructions

  1. Prepare the dressing by whisking together the pepper, salt, vinegar, honey, and 3 tablespoons of olive oil until emulsified, then mix in the crème fraiche or yogurt.
  2. Heat the remaining tablespoon of olive oil in a skillet over medium-high heat and sauté the pea shoots with a pinch of salt for about 5 seconds until wilted, then transfer to a plate.
  3. In the same skillet, add the shredded tofu, most of the pepitas and sesame seeds, and two-thirds of the dressing. Toss gently to warm without breaking the tofu.
  4. Transfer the mixture to a serving platter, top with pea shoots, remaining sesame seeds, and pepitas, and serve with extra dressing on the side.
