Broccolini Mushroom Tofu Stir-Fry

Ingredients

The stir-fry

  • 8 ounces broccolini
  • 10–12 ounces extra firm tofu
  • 1 fat shallot shallot
  • 5 cloves garlic
  • 8 ounces shiitake mushrooms
  • 2 tablespoons high-heat oil
  • 4–5 pieces dried red chilies

The sauce

  • 2 tablespoons soy sauce
  • 2 tablespoons sweetened black vinegar
  • 2 tablespoons water
  • 1–3 teaspoons sriracha or red chili paste

Optional garnishes

  • as desired scallions
  • as desired Peanut Chili Crunch
  • as desired crushed peanuts
  • as desired toasted cashews
  • as desired crispy shallots
  • as desired sesame seeds

Instructions

  1. Steam the broccolini until tender and crisp.
  2. Prepare the stir-fry sauce by whisking the ingredients together.
  3. Chop the shallots and garlic, and slice the mushrooms.
  4. Heat oil in a wok or skillet and season it with salt and pepper.
  5. Add tofu and brown on all sides, then set aside.
  6. In the same pan, add more oil and sauté shallots and garlic until fragrant.
  7. Add mushrooms and cook until tender, then add dried chilies.
  8. Pour in the stir-fry sauce and add the steamed broccolini and tofu, tossing to coat.
  9. Serve immediately, garnished as desired.
