Ingredients

The salmon

  • 1 lb salmon fillet (cut into serving portions)

The smoked salmon glaze

  • ¼ cup coconut aminos
  • 2 tbsp orange juice
  • 1 tbsp maple syrup (optional, can omit or substitute honey or other sweetener)
  • ½ tsp garlic powder
  • ½ tsp onion powder

Instructions

  1. Preheat the smoker or pellet grill to 225° Fahrenheit.
  2. Cut the salmon into 3-4 oz portions and place on a sheet pan.
  3. Mix all glaze ingredients in a small bowl.
  4. Brush the salmon pieces with the glaze.
  5. Place the salmon directly on the smoker grill grates.
  6. Smoke at 225° Fahrenheit for about 60-90 minutes, brushing with remaining glaze every 15 minutes.
  7. Check the salmon around the 1-hour mark; it's done when the internal temperature reaches 145° Fahrenheit.
  8. Remove from the smoker and let rest for 5 minutes before serving.
