Ingredients

The salmon

  • 1.5 lbs sockeye salmon side

The dry rub

  • 2 teaspoons kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon brown sugar
  • ½ teaspoon white pepper

Instructions

  1. Mix kosher salt, brown sugar, garlic powder, and white pepper in a small bowl.
  2. Prepare the salmon by placing it skin-side down on aluminum foil sprayed with cooking spray.
  3. Pat the salmon dry with paper towels.
  4. Coat the salmon with the dry rub seasoning mix and let it sit for at least 30 minutes.
  5. Preheat the smoker to 225 degrees Fahrenheit.
  6. Add wood chips to the smoke tube.
  7. Place the salmon in the smoker with a thermometer in the thickest part.
  8. Cook until the internal temperature reaches 140-145 degrees Fahrenheit.
  9. Remove the salmon from the smoker and let it rest for 15 minutes before serving.
