Instructions
- Mix kosher salt, brown sugar, garlic powder, and white pepper in a small bowl.
- Prepare the salmon by placing it skin-side down on aluminum foil sprayed with cooking spray.
- Pat the salmon dry with paper towels.
- Coat the salmon with the dry rub seasoning mix and let it sit for at least 30 minutes.
- Preheat the smoker to 225 degrees Fahrenheit.
- Add wood chips to the smoke tube.
- Place the salmon in the smoker with a thermometer in the thickest part.
- Cook until the internal temperature reaches 140-145 degrees Fahrenheit.
- Remove the salmon from the smoker and let it rest for 15 minutes before serving.
