Ingredients

The pinwheel filling

  • 3 cups shredded chicken
  • 3 oz goat cheese
  • ¾ cup basil pesto

The wrap

  • 4 pieces burrito size low carb tortillas
  • ½ cup sliced sun dried tomatoes

Instructions

  1. Pulse shredded chicken, goat cheese, and basil pesto in a food processor until creamy.
  2. Spread ¾ cup of the pesto chicken mixture evenly over a tortilla.
  3. Sprinkle ¼ of the sun dried tomatoes on top of the mixture.
  4. Roll the tortilla tightly into a cigar shape and wrap it in plastic wrap.
  5. Refrigerate for 2 hours.
  6. Slice into ½ inch coins and serve.
