Pesto Chicken Pinwheels

The wrap

burrito size low carb tortillas

sliced sun dried tomatoes
Instructions
- Pulse shredded chicken, goat cheese, and basil pesto in a food processor until creamy.
- Spread ¾ cup of the pesto chicken mixture evenly over a tortilla.
- Sprinkle ¼ of the sun dried tomatoes on top of the mixture.
- Roll the tortilla tightly into a cigar shape and wrap it in plastic wrap.
- Refrigerate for 2 hours.
- Slice into ½ inch coins and serve.
