Sweet Potato Grain Bowls with Green Tahini Sauce

Instructions
- Toast the uncooked bulgur in a pot over medium heat for 2-3 minutes until it smells nutty.
- Add 2 cups of water to the bulgur, cover, and bring to a boil, then reduce heat and simmer for 12 minutes.
- Let the bulgur rest for 5 minutes after cooking, then fluff with a fork and cool.
- Preheat the oven to 400ºF, peel and dice the sweet potatoes, and toss with olive oil, salt, and pepper.
- Roast the sweet potatoes for 20 minutes, stir, and roast for another 10 minutes until soft and browned.
- Prepare the green tahini sauce by blending tahini, water, lemon juice, garlic, cumin, cayenne, salt, cilantro, and parsley until smooth.
- Slice the avocado and jalapeño, and rinse the black beans.
- Assemble the bowls with bulgur, sweet potatoes, black beans, avocado, jalapeño, and pepitas, then drizzle with green tahini sauce.
