Sweet Potato Grain Bowls with Green Tahini Sauce

Ingredients

The grain and vegetables

  • 1 cup uncooked bulgur
  • 2 lbs. sweet potatoes
  • 2 Tbsp olive oil
  • 1 pinch salt and pepper
  • 1 15 oz. can black beans
  • 1 avocado
  • 1 jalapeño
  • ¼ cup pepitas

The green tahini sauce

  • cup tahini
  • cup water
  • ¼ cup lemon juice
  • 1 clove garlic
  • ½ tsp ground cumin
  • ¼ tsp cayenne pepper
  • ½ tsp salt
  • 1 cup fresh cilantro (loosely packed)
  • 1 cup fresh parsley (loosely packed)

Instructions

  1. Toast the uncooked bulgur in a pot over medium heat for 2-3 minutes until it smells nutty.
  2. Add 2 cups of water to the bulgur, cover, and bring to a boil, then reduce heat and simmer for 12 minutes.
  3. Let the bulgur rest for 5 minutes after cooking, then fluff with a fork and cool.
  4. Preheat the oven to 400ºF, peel and dice the sweet potatoes, and toss with olive oil, salt, and pepper.
  5. Roast the sweet potatoes for 20 minutes, stir, and roast for another 10 minutes until soft and browned.
  6. Prepare the green tahini sauce by blending tahini, water, lemon juice, garlic, cumin, cayenne, salt, cilantro, and parsley until smooth.
  7. Slice the avocado and jalapeño, and rinse the black beans.
  8. Assemble the bowls with bulgur, sweet potatoes, black beans, avocado, jalapeño, and pepitas, then drizzle with green tahini sauce.
