Shrimp and Cheese Spring Rolls

The marinade

fresh ginger juice

Instructions
- Pat the shrimp dry and marinate with the marinade ingredients for 15 minutes.
- Add chopped scallions to the marinated shrimp.
- Place cheddar cheese on each shrimp and wrap with spring roll skin, sealing edges with egg white.
- Heat oil in a frying pan and deep fry the spring rolls until golden brown and crispy.
- Serve hot with chili sauce or mayonnaise.
