Shrimp and Cheese Spring Rolls

Ingredients

The filling

  • 50 pieces medium sized shrimp, shelled and deveined but leave the tail on
  • 4 oz cheddar cheese, cut into very tiny cubes
  • 2 pieces scallions, finely chopped
  • 1 piece egg white, lightly whisked for sealing

The wrappers

  • 50 pieces spring roll skin, small piece

The marinade

  • teaspoons fresh ginger juice
  • 1 teaspoon salt
  • 2 teaspoons sugar
  • 2 teaspoons cornstarch
  • 2 teaspoons sesame oil
  • teaspoons lime juice
  • ½ teaspoon white pepper

Instructions

  1. Pat the shrimp dry and marinate with the marinade ingredients for 15 minutes.
  2. Add chopped scallions to the marinated shrimp.
  3. Place cheddar cheese on each shrimp and wrap with spring roll skin, sealing edges with egg white.
  4. Heat oil in a frying pan and deep fry the spring rolls until golden brown and crispy.
  5. Serve hot with chili sauce or mayonnaise.
