Firecracker Shrimp

Ingredients

The shrimp

  • 20 pieces shrimp, shelled and deveined but leave the tail on
  • 20 pieces spring roll skins
  • 1 stalk scallion, finely chopped
  • ½ piece red chili, finely chopped

The marinade

  • 3 inches ginger, peeled and pounded for juice
  • teaspoon salt
  • ¼ teaspoon sugar
  • ¼ teaspoon lime juice
  • ¼ tablespoon sesame oil
  • ¼ teaspoon sesame seeds
  • ¼ teaspoon cornstarch
  • 3 dashes white pepper
  • 1 egg white lightly whisked for sealing purposes

Instructions

  1. Pat the shrimp dry and marinate with ginger juice and other marinade ingredients for 20 minutes.
  2. Add chopped scallion and red chili to the marinated shrimp.
  3. Wrap each shrimp with a spring roll skin.
  4. Heat oil in a frying pan and deep-fry the shrimp until golden brown.
  5. Serve hot.
