Ingredients

The Fish and Tortillas

  • 1 lb MSC certified halibut or similar white fish
  • Sea salt and freshly ground black pepper
  • 2 Tbsp avocado oil
  • Tortillas of choice

The Slaw

  • ½ small head red cabbage, shredded
  • ½ medium red onion, thinly sliced
  • 1 whole jalapeño, seeded and diced
  • 2 limes juiced
  • 1 tsp fine sea salt

The Chipotle Lime Crema

  • ½ cup dairy free plain yogurt
  • ¼ tsp chipotle powder
  • ½ tsp sea salt
  • 1 Tbsp lime juice
  • ¼ tsp garlic powder

Toppings

  • ½ cup chopped cilantro
  • 2 whole jalapeños or serranos, sliced
  • 1 whole avocado, diced
  • 2 limes cut into wedges

Instructions

  1. Prepare the fish by patting it dry, slicing into strips, and seasoning with salt and pepper.
  2. Make the red cabbage slaw by combining all slaw ingredients in a bowl and massaging until the cabbage softens.
  3. Combine all chipotle lime crema ingredients in a small bowl and refrigerate.
  4. Heat avocado oil in a skillet and cook the fish strips for about 2 minutes per side until browned and opaque.
  5. Remove the fish from the skillet and assemble the tacos with tortillas, fish, slaw, cilantro, avocado, jalapeños, and crema.
  6. Serve immediately with lime wedges.
