Ingredients

The curry

  • 2 Tbsp coconut, avocado, or grape seed oil
  • 4 cloves garlic, minced
  • 2 medium shallots, diced
  • 1 Tbsp minced ginger
  • 1 Tbsp curry powder
  • 8 ounces frozen spinach
  • 2 2/3 cups light coconut milk
  • 1 Tbsp coconut sugar
  • to taste sea salt
  • 2-3 Tbsp cornstarch or arrowroot starch (optional)

For serving (optional)

  • 2-3 cups cooked white or brown rice

Instructions

  1. Heat a large skillet or pot over medium heat and add oil, garlic, shallot, and ginger. Cook until softened.
  2. Add curry powder and frozen spinach, cooking for a few minutes.
  3. Stir in coconut milk, coconut sugar, and sea salt, and heat until simmering.
  4. Transfer the curry to a blender and blend until creamy. Optionally add cornstarch for thickness.
  5. Taste and adjust flavors as needed, then return the curry to the skillet and heat until bubbling.
  6. Serve with rice and any desired sides or add-ins.
