Instructions
- Heat a large skillet or pot over medium heat and add oil, garlic, shallot, and ginger. Cook until softened.
- Add curry powder and frozen spinach, cooking for a few minutes.
- Stir in coconut milk, coconut sugar, and sea salt, and heat until simmering.
- Transfer the curry to a blender and blend until creamy. Optionally add cornstarch for thickness.
- Taste and adjust flavors as needed, then return the curry to the skillet and heat until bubbling.
- Serve with rice and any desired sides or add-ins.
