Herbed Potato Salad

Instructions
- Boil sliced potatoes with salt in a large saucepan until tender.
- Reserve some cooking water, then drain the potatoes and transfer to a bowl.
- Blend olive oil, parsley, green onions, lemon juice, mustard, garlic, and pepper in a food processor.
- Add reserved cooking water to the blend and process until combined.
- Drizzle the herbed mixture over the potatoes and mix gently.
- Let the salad rest for 10 minutes, tossing occasionally.
- Add chopped celery and garnish with additional parsley and green onions.
- Season with salt and pepper to taste.
- Serve immediately or refrigerate until ready to serve.
