Herbed Potato Salad

Ingredients

The salad

  • 2 pounds small red potatoes
  • 1 tablespoon fine sea salt
  • ¼ cup olive oil
  • cup fresh flat-leaf parsley
  • cup green onions
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons Dijon mustard
  • 2 cloves garlic
  • to taste freshly ground black pepper
  • 3 stalks celery

For garnish

  • 2 tablespoons fresh flat-leaf parsley
  • 2 tablespoons green onions

Instructions

  1. Boil sliced potatoes with salt in a large saucepan until tender.
  2. Reserve some cooking water, then drain the potatoes and transfer to a bowl.
  3. Blend olive oil, parsley, green onions, lemon juice, mustard, garlic, and pepper in a food processor.
  4. Add reserved cooking water to the blend and process until combined.
  5. Drizzle the herbed mixture over the potatoes and mix gently.
  6. Let the salad rest for 10 minutes, tossing occasionally.
  7. Add chopped celery and garnish with additional parsley and green onions.
  8. Season with salt and pepper to taste.
  9. Serve immediately or refrigerate until ready to serve.
