French Potato Salad

finely-chopped fresh French herbs (rosemary, chives, tarragon, thyme, dill, or a combo)
Instructions
- 1. Cook the diced potatoes in a large stockpot covered with salted water until tender, about 5-8 minutes.
- 2. Drain the potatoes and let them cool for 20-30 minutes.
- 3. Whisk together olive oil, lemon juice, garlic, mustard, salt, and pepper in a bowl until combined.
- 4. In a large serving bowl, combine the cooled potatoes, dressing, shallot, and fresh herbs, and toss gently.
- 5. Taste and adjust seasoning with salt and pepper as needed.
- 6. Cover and refrigerate for 1-2 hours before serving chilled.
