Instructions
- Boil the sliced potatoes in a large saucepan with cold water and salt, adding garlic cloves, and simmer for about 5 minutes until tender.
- While the potatoes are cooking, whisk together the dijon mustard, olive oil, vinegar, and black pepper to make the vinaigrette.
- Drain the potatoes and garlic, then spread them on a baking sheet to cool slightly. Mince the garlic and mix it into the vinaigrette.
- Drizzle the vinaigrette over the warm potatoes and let them sit for 10-15 minutes.
- Gently toss the potatoes with the fresh herbs in a serving bowl and serve at room temperature or chilled.
