French Potato Salad

The potatoes

The vinaigrette

Instructions
- Boil the sliced potatoes in salted water until tender.
- While the potatoes are cooking, whisk together the vinaigrette ingredients.
- Drain the potatoes and garlic, then cool them on a baking sheet.
- Mince the cooked garlic and mix it into the vinaigrette.
- Drizzle the vinaigrette over the warm potatoes and let sit for 10-15 minutes.
- Toss the potatoes with fresh herbs and serve at room temperature or chilled.
